Strawberry Mousse


I've been on a kick of making a fancy looking dessert or treat to go with dinner. It makes us all feel extra fancy. (Maybe I've been reading too much Fancy Nancy)
Anyway, this one is easy and fun, and my kids and hubby all felt extra special!


Strawberry Mousse


Strawberries for dipping
1/2 cup semisweet chocolate chips, melted
3 TBS white chocolate chips, melted


1 cup frozen strawberries, thawed

2 Tbsp powdered sugar
2 Tbsp strawberry jam (homemade freezer jam is THE BEST)
1 pkg whipped topping mix (I used the Dream Whip for this)
1/3 cup milk
3 drops red food coloring
Additional whipped topping

Line a pan with wax paper. Pat fresh strawberries dry with paper towel. Dip each strawberry halfway into melted chocolate. Place on wax paper. Drizzle with melted white chips. Refrigerate.
Meanwhile, in bowl, mash together frozen strawberries, sugar, and jam. Set aside. On medium-high speed, beat topping mix with milk until stiff peaks form. Add strawberry mixture; beat 1 minute. Stir in food coloring.
Divide mixture among dessert glasses. Refrigerate 3 or more hours.
Before serving, garnish with additional whipped topping and chocolate dipped strawberries.

Wicked Easy Mexican Crockpot Chicken

I got this recipe from my good friend, Rachel. When I saw how simple it was, I just had to try it. Delicious, simple, perfect... Doesn't get better than that.

Mexican Crockpot Chicken

4 - 6 Chicken Breasts
2 jars Newman's Own Black Bean and Corn Salsa (16 oz) (I used a generic brand with great success)

Optional Extras: Diced Chili's, Diced Jalepenos, Black Olives, Sour Cream, Cream Cheese

Throw it all in the crockpot and cook on low 6 - 8 hours. If you are using 2-3 chicken breasts only use one jar of sala. I also like to put in an 8 oz block of cream cheese. It makes it a little creamier for burritos. Shred chicken before serving. Top with shredded cheese. Serve with tortilla chips, rolled up burrito style, or a topping for nachos.

Chocolate Chip Cookie Pizza


This is one of my family's favorite family night treats. It is quick and easy and so delicious. I like to make my own cookie dough and have a bit leftover for some chocolate chip cookies.
I've also made it in a cookie sheet and cut it into squares which works well also. It is a fun treat that my kids love helping me make too.

Chocolate Chip Cookie Pizza

1 tube chocolate chip cookie dough (or your favorite recipe)
1 package (8 oz) cream cheese, softened
1/3 cup sugar
2 cups cold half and half cream
1 package (3.9 oz) instant chocolate pudding mix
1/3 cup chopped pecans or walnuts (optional)
Sprinkles

Press cookie dough onto an ungreased 12 inch pizza pan. Bake at 350 degrees for 13 - 16 minutes or until cneter is set and cookie lightly browned. Cool for 5 minute; gently run a flexible metal spatula under crust to loosen. Cool completely.
In a small mixing bowl, beat cream cheese and sugar until blended. Spread over crust. IN a bowl, whisk cream and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Spread over cream cheese mixture; sprinkle with nuts. Refrigerate until serving. Add sprinkles right before serving.

Curly Noodle Dinner

Who needs a quick easy dinner that your kids will love? I used to be against Ramen Noodles, yes, I was a Ramen hater, but then I had 4 kids and realized that my plan of gourmet meals every night were a short cry from crazy. Ramen noodles and I have become friends. I don't feel guilty anymore when I have to pull out the RN for a late, quick dinner or speedy lunch. My kids love Ramen Noodles and since they don't have it often it is a BIG treat for them to have.... which I think is hilarious.
Anyway, Ramen Noodles is the base of this dish, and let me tell ya, it tasted about a million times better than I expected.
How can something so vile taste so good? ha, ha, It's a mystery. This is a quick, easy dish that requires few items. It's perfect paired with homemade bread and jam.

Curly Noodle Dinner

1 pound ground beef
1 can (14 1/2 oz) diced tomatoes, undrained
1 can whole kernel corn, drained
1 package beef ramen noodles
1/4 to 1/2 cup water.

In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the tomatoes, corn, and contents of noodle seasoning packet. Bring to a boil. Break noodles into small pieces; stir into beef mixtrue.
Reduce heat; cover and simmer for 10-12 minutes or until noodles are tender, adding a little water at a time until desired consistency is reached.

April Fools Day Dinner

On the menu for tonight: Meatloaf with mashed potatoes and gravy, and cupcakes with pink frosting for dessert.... or is it? Look closely, and you'll see a few tricks.
I served up this meatloaf and mashed potatoes and gravy dish for my family. I really wish I would have had my camera for the expressions on their faces. The kids thought it was the funniest thing ever. Oh, how I love a good prank. ;)
The meatloaf is a dense chocolate rice krispie treat, cut into slices. And the mashed potatoes? Vanilla ice cream with caramel sauce. It was totally obvious to me while dishing it on the plates, but apparently my family doesn't look too closely. They were all fooled... and delighted to have dessert first.
And these lovely pink cupcakes with sprinkles were nothing more than mini meatloaves baked in cupcake liners and topped with mashed potates that were tinted with beet juice.

It was such a fun meal. Try it sometime even if it's not April Fool's day. It's guaranteed a table of smiles and laughs.
