Slow Cooker Corned Beef and Cabbage

This is a terrific recipe. Even for those who are wary of the words "corned beef" and "cabbage". I made it mainly for the hubs and I as we both like Irish themed food. I was so surprised when my kids ate it up!! Yes, even the cabbage part!! In fact, if I woke up with my head sewn to the carpet, I wouldn't be more surprised. (name that movie, ha, ha!)
The vegetables were tender and delicious, and the beef was really tasty. If you're feeling a little Irish, try this recipe!

Slow Cooker Corned Beef and Cabbage

4 large carrots, peeled and cut into matchstick pieces
10 baby red potatoes, quartered
1 onion, peeled and cut into bite-sized pieces
4 cups water
1 (4 pound) corned beef brisket with spice packet
6 ounces beer (I used apple juice)
1/2 head cabbage, coarsely chopped

Directions
1.Place the carrots, potatoes, and onion into the bottom of a slow cooker, pour in the water, and place the brisket on top of the vegetables. Pour the beer over the brisket. Sprinkle on the spices from the packet, cover, and set the cooker on High.
2.Cook the brisket for about 8 hours. An hour before serving, stir in the cabbage and cook for 1 more hour.
