Stuffed Jumbo Shells


I'm in bed all day today and thought I would do something worthwhile, so I am catching up on here. I have lots of yummy dishes and tasty treats to post from December. The first is Stuffed Jumbo Shells. These were really good. I liked them more than my husband, but I'm such a pasta lover that was no surprise. My kids loved them, especially when I told them there was a cheesy surprise inside the shells. Then they were intent on opening up the shells and making sure to eat all the surprise. ;) I ate them for leftovers 3 days in a row and still didn't get sick of them. They were quite easy to make also.

Stuffed Jumbo Shells
  • 28 uncooked jumbo pasta shells
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 2 garlic cloves, minced
  • 2 (15 ounce) cans tomato sauce
  • 1 (28 ounce) can Italian-style diced tomatoes, well drained
  • 1 1/2 teaspoons dried oregano, divided
  • 1/2 teaspoon dried basil
  • 2 eggs, lightly beaten
  • 3 cups small curd cottage cheese or ricotta
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon seasoned salt
  1. Cook pasta shells according to package directions. Meanwhile, in a skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in the tomato sauce, tomatoes, 1/2 teaspoon oregano and basil. Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes.
  2. In a large bowl, combine the eggs, cottage cheese, mozzarella cheese, Parmesan cheese, seasoned salt and remaining oregano. Drain pasta shells; cool slightly. Stuff with cheese mixture.
  3. Spread 1 1/2 cups of meat sauce into a large baking dish; arrange shells over sauce in a single layer. Pour remaining meat sauce over the shells. Cover and bake at 350 degrees F for 45-50 minutes.

Apology

Sorry I haven't posted for awhile. I'm in that yucky phase of pregnancy where any thought, smell, or picture of food makes me run for the toilet. I have quite a few dinners and desserts from December that I will be posting soon, so keep checking back... and please forgive my lack of posting. All I can stomach is crackers... and let's face it that's not very appetizing.
